Mid Autumn Festival Part I
The Mid Autumn Festival is coming soon. When we mention that, everyone remembers the legends and fairy tales from ancient times and the origin of various delicious moon cakes. In the next two days, we will briefly describe the characteristics of the Mid Autumn Festival.
Firstly, before the festival arrives, every family prepares several boxes of moon cakes as offerings to the moon. Legend has it that during the Yuan(元) dynasty (A.D.1280-1368) China was ruled by the Mongols form the north. Leaders from the preceding Sung(宋) dynasty (A.D.960-1280) were unhappy submitting to foreign rule, and set how to coordinate a rebellion without being discovered. The leaders knew the Moon Festival was drawing near, and ordered someone to make special cakes containing messages with the outline of the attack in each of them. Then, on the night of the Moon Festival, the rebels successfully attacked and overthrew the government. What followed was the establishment of the Ming dynasty (A.D. 1368-1644). Today, moon cakes are eaten to commemorate this event.
A traditional Moon Cake is a baked pastry filled with lotus seed paste and a salted egg yolk in the center. But modern inspirations and the cost of lotus seed paste have lead to the creation of many different types of fillings, such as red bean paste, mung bean paste, mixed nuts, dried fruits, and even ham, are used to add variety to Moon Cakes.

Step one: Moon cake Pastry
| 1 | tsp | soda |
| 1 1/2 | tbsp | water |
| 100 | ml | peanut oil |
| 550 | grams | flour |
Pour the soda and oil into a mixing bowl. Add the water and mix with a wooden spoon. Fold in the flour gradually and stir until the dough is firm. Let the dough rest for five hours.
Step two: Lotus seed Fillings
| 500 | grams | lotus seeds |
| 1 1/2 | tsp | water |
| 340 | ml | peanut oil |
| 450 | grams | sugar |
| 1 | tbsp | maltose |

Add water to the lotus seeds, mix well and set aside for 20 minutes. Add boiling water and cover up for 20-30 minutes. Strain and wash the lotus seeds to remove the skin.
Boil lotus seeds until they are soft. Put them into a blender with some water and make them into a thick paste.
Heat a wok with a quarter portion of oil and a quarter portion of sugar. When the sugar turns light brown, add the blended lotus paste and the remaining sugar. Stir constantly until the paste is smooth and thick in consistency. Add in the rest of the oil gradually. Keep stirring the paste until thick. Lastly, stir in maltose and stir well to blend.
Leave overnight before use.
Step three: Making The Moon cakes
Divide your dough into even pieces of 40g each. Roll the dough into a ball and flatten out with your hand.
Weigh the lotus seed paste. If you like the yolk of salted eggs, you can insert one in the center.
Place the filling in the middle of the flat dough and slowly wrap around it. Seal the edges and roll the dough lightly between your palms until the filling is no longer visible.
Dust mould lightly with flour. Press dough ball into the moon cake mould. Knock the mould against the table to dislodge the moon cake.
Bake in a preheated oven at 180 degrees C for 10 minutes. Remove and let cool for 5 minutes. Brush on beaten egg glaze. Return to bake for another 10 minutes or till golden.
Step Four: Egg Glaze
Mix these ingredients together:
