Light Tomato Soup
| The cool nights of winter are quickly creeping

| nothing warms your soul like a creamy bowl of tomato soup.

| Below is an easy recipe for Italian tomato soup. I
hope you will try it out tonight. |

cube beef bouillon |

unsalted butter |
| 1/4 |

flour |

basil leaves |

minced, hardboiled eggs |

tomato puree |
| 1/4 |
cup |
plain yogurt |

salt and pepper |
Cooking Directions

Bring 2 cups of water to a boil in a 1 quart pot. Crumble
in the bouillon cube and cook until it is dissolved.
This is the broth. |

Melt the butter in a 3 quart pot, add the flour, and
whisk all the while to prevent lumps.
Pour in the broth in an even stream. Fold in the tomato,
bring to a boil, and cook over moderate heat for 10
minutes. |

Stir in the yogurt, basil, and pepper. Check for salt,
adding some if necessary (The bouillon is already quite salty, so you
probably won't need much. |

Serve the soup hot, garnished with
the minced hardboiled eggs and the diced carrot. |
